Golden Pumpkin Soup

This nourishing soup is rich in antioxidants, healthy fats, and warming spices that calm inflammation, support digestion, and uplift mood—perfect for the season of change.

Ingredients
  

  • 2 cups Roasted Pumpkin (or butternut squash)
  • 1 can Coconut Milk
  • 2 cups Vegetable or Bone Broth
  • 1 tbsp Olive Oil
  • 1 sm Onion
  • 2 cloves Garlic
  • 1 tsp Turmeric
  • 1/2 tsp Ginger Powder
  • 1/2 tsp Cinnamon
  • Sea Salt to taste
  • Black Pepper to taste

Optional

  • Pumpkin Seeds for Topping

Instructions
 

  • Sauté onion and garlic in olive oil until soft.
  • Add spices and stir until fragrant.
  • Add pumpkin, broth, and coconut milk and simmer for 15 minutes.
  • Blend until smooth, then adjust seasoning.
  • Top with toasted pumpkin seeds for crunch.
