Golden Pumpkin Soup

- 2 cups Roasted Pumpkin (or butternut squash)
- 1 can Coconut Milk
- 2 cups Vegetable or Bone Broth
- 1 tbsp Olive Oil
- 1 sm Onion
- 2 cloves Garlic
- 1 tsp Turmeric
- 1/2 tsp Ginger Powder
- 1/2 tsp Cinnamon
- Sea Salt to taste
- Black Pepper to taste
Optional
- Pumpkin Seeds for Topping
Sauté onion and garlic in olive oil until soft.
Add spices and stir until fragrant.
Add pumpkin, broth, and coconut milk and simmer for 15 minutes.
Blend until smooth, then adjust seasoning.
Top with toasted pumpkin seeds for crunch.
