Golden Pumpkin Soup

Ingredients
- 2 cups Roasted Pumpkin (or butternut squash)
- 1 can Coconut Milk
- 2 cups Vegetable or Bone Broth
- 1 tbsp Olive Oil
- 1 sm Onion
- 2 cloves Garlic
- 1 tsp Turmeric
- 1/2 tsp Ginger Powder
- 1/2 tsp Cinnamon
- Sea Salt to taste
- Black Pepper to taste

- Pumpkin Seeds for Topping
Instructions
- Sauté onion and garlic in olive oil until soft.
- Add spices and stir until fragrant.
- Add pumpkin, broth, and coconut milk and simmer for 15 minutes.
- Blend until smooth, then adjust seasoning.
- Top with toasted pumpkin seeds for crunch.
